Chicken Fried Rice
Takeout-style fried rice at home: cold day-old rice, a screaming-hot pan, and everything cooked in stages so nothing steams. Have every ingredient prepped and next to the stove before you start — the cooking takes 10 minutes flat.

About the rice: day-old refrigerated rice is dry and separates into individual grains — that's what fries. Fresh rice is moist and turns to mush. If you only have fresh, spread it on a sheet pan and freeze for 20–30 minutes to dry it out. Either way, break the cold rice apart with wet hands before cooking so there are no clumps.

Prep everything and line it up by the stove: chicken seasoned with a pinch of salt, eggs beaten, vegetables cut, sauces measured into one small bowl (soy + oyster together). Once the pan is hot there is zero downtime.

Heat a wok or your largest skillet over the highest heat your stove has until a drop of water evaporates on contact — for a wok, until a wisp of smoke rises.

Add 1 tablespoon of oil, swirl, then add the chicken in a single layer. Let it sit 1 minute to brown before stirring, then stir-fry 2–3 minutes more until cooked through with golden edges. Move it to a bowl.

Add a teaspoon more oil, pour in the eggs, and scramble with your spatula, breaking them into large soft curds. Pull them out at 80% done — still glossy — into the chicken bowl. They'll finish later.

Add the remaining oil. Stir-fry the onion for about 1 minute until it starts to soften, then the garlic for 30 seconds — moving constantly so it doesn't scorch.

Add all the rice. Press it flat against the hot pan with the back of your spatula, wait 20–30 seconds so the grains sear and toast, then toss and press again. Repeat this press-and-toss cycle for 2–3 minutes — this is what creates the slightly smoky, chewy takeout texture ('wok hei' at home).

Drizzle the soy-oyster mixture around the EDGE of the pan, not on the rice — sauce hitting hot metal caramelizes instantly instead of soaking in soggy. Toss quickly to coat every grain; the rice should turn a pale even brown with no white patches and no puddles.

Add the frozen peas and carrots and toss 1 minute — the pan's heat cooks them straight from frozen.

Return the chicken and eggs, breaking the eggs into bite-size pieces as you toss, about 1 minute until everything is hot.

Kill the heat. Add the sesame oil, scallions, and white pepper and give a final toss — sesame oil is a finishing oil; cooking it kills the aroma.
