Crispy Salmon Rice Bowl
Glazed crispy-skin salmon over warm rice with avocado, cucumber, and spicy mayo. The skin crisps like a chip if you dry it well, start it in a hot pan, and have the patience not to move it.

Take the salmon out of the fridge 15 minutes ahead, and pat it aggressively dry with paper towels — especially the skin. Then salt the skin side and let it sit 5 minutes; the salt pulls out more surface moisture. Pat dry AGAIN. Dry skin is crispy skin; damp skin is rubber.

While the salmon sits, stir the rice vinegar into the warm rice, mix the soy sauce, honey, and ginger in a small bowl for the glaze, and stir the sriracha into the mayo. Slice the avocado and cucumber.

Heat the oil in a nonstick or well-seasoned pan over medium-high until it shimmers and flows like water when you tilt the pan.

Lay the fillets in skin-side DOWN, laying them away from you. They will buckle immediately — press each one flat with a spatula for the first 20–30 seconds until they relax. This keeps the whole skin surface in contact with the pan.

Now don't touch them. Cook 4–6 minutes on the skin side — about 70% of the total cooking — until you can see the flesh turning opaque from the bottom up the sides. If you try to lift the fillet and the skin resists, it isn't crisp yet; it will release on its own when it's ready.

Flip and cook just 1–2 minutes on the flesh side, until the salmon is blushing pink and barely flakes in the thickest part (52–54°C / 125–130°F for medium). It keeps cooking off the heat — overdone salmon is chalky.

Turn the heat to low and pour the soy-honey glaze into the pan around the fish. It will bubble and thicken in 30–60 seconds; spoon it over the fillets a few times, then pull the pan off before the honey scorches.

Divide the warm rice between two bowls. Break each fillet into large glossy flakes right in the pan — skin and all, it's the best part — and pile onto the rice.

Fan the avocado and cucumber alongside, drizzle every remaining drop of pan glaze over the fish, then zig-zag the spicy mayo across the whole bowl.

Finish with sesame seeds and scallions. Eat immediately while the skin still crackles.
