Double Smash Burger

Crispy lacy edges, melty American cheese, and a toasted potato bun. The whole technique is heat + pressure + patience: a ripping-hot pan, a hard smash in the first 10 seconds, and no touching after that.

    Divide the beef into 4 equal balls (about 100g each), handling it as little as possible and packing it LOOSELY — just enough to hold together. Overworked beef gets dense and bouncy. Do not season yet; salt draws out moisture and you want a dry surface for crust.

    Keep the balls in the fridge until the moment you cook. Cold, loose beef + hot pan = maximum crust.

    Mix the burger sauce if using. Butter the cut sides of the buns and toast them in a dry skillet over medium heat until golden. Set aside and wipe the pan.

    Heat a cast-iron skillet or griddle over high heat for a good 3–4 minutes, until it's just starting to smoke. A properly hot pan is the entire trick — if it's merely warm, the patty steams and you get gray meat with no crust.

    Place two balls in the pan well apart. Immediately press each one flat and HARD with your spatula — press with a second spatula or pot bottom for leverage — until it's thinner than you think it should be, about 1cm with ragged edges. You have a 10-second window to smash; after that the juices are flowing and pressing squeezes them out.

    NOW season the exposed tops generously with salt and pepper. If you're doing onions, press a small pile of the paper-thin slices into each raw top so they steam into the meat when flipped.

    Leave the patties completely alone for about 2 minutes. Watch the edges: when they're deep brown and lacy and the top is going gray, it's flip time.

    Scrape — don't lift — each patty off with the sharp edge of the spatula at a low angle, keeping every bit of crust attached to the meat, and flip.

    Lay a slice of cheese on each patty immediately after flipping. The second side needs only 45–60 seconds; thin patties are done fast.

    Stack one patty onto the other (cheese between the layers) and rest the stack on the toasted bottom bun while you smash the second pair.

    Build: sauce on the bottom bun, pickles, the double patty stack, more sauce or ketchup/mustard on the top bun. Crown it.

  12. 12

    Rest one minute under a loose foil tent so the cheese fully drapes, then eat immediately over a plate — a proper smash burger drips.
