Perfect Roast Chicken

Crackly golden skin and juicy meat with barely any work. The secrets: a very dry bird, generous salt (ideally hours ahead), high heat, and a real 15-minute rest before carving.

    Pat the chicken bone-dry with paper towels — inside the cavity too. Moisture is the enemy of crisp skin, so be thorough.

    Salt it generously all over, including inside the cavity, working a little under the skin of the breast where you can loosen it with a finger. If you have time, set the chicken on a plate and refrigerate it UNCOVERED for 4–24 hours: the salt penetrates the meat and the fridge air dries the skin. This 'dry brine' is the single biggest upgrade you can make. Short on time? Even 30 minutes at room temperature helps.

    Take the chicken out of the fridge 30–45 minutes before roasting so it isn't ice-cold in the center, and heat the oven to 220°C / 425°F with a rack in the lower-middle position.

    Pat the skin dry one more time, then rub it all over with the softened butter and grind over the pepper.

    Stuff the cavity with the lemon halves, the halved garlic head, and the thyme. They perfume the meat from the inside and flavor the pan juices.

    Tie the legs together snugly with twine and tuck the wing tips under the body. Trussing keeps the bird compact so the breast and thighs finish closer together, and nothing burns.

    Set the chicken breast-side up in a cast-iron skillet or roasting pan (no rack needed) and slide it into the oven, legs pointing toward the back where the oven runs hotter.

    Roast for 60–75 minutes without opening the door for the first 45. The skin should be deep golden brown and crackly all over.

    Check doneness with a thermometer pushed into the thickest part of the thigh WITHOUT touching bone: you want 74°C / 165°F, and the juices should run clear when you pull the probe out. No thermometer? Wiggle a leg — it should feel loose at the joint.

    Move the chicken to a cutting board and rest it, uncovered, for a full 15 minutes. Cutting early lets every juice you worked for run onto the board instead of staying in the meat.

    Carve: slice through the skin between leg and breast, pop the thigh joints, and remove the legs; then cut along each side of the breastbone and lift the breasts off whole before slicing them crosswise.

    Squeeze the roasted lemon from the cavity into the pan drippings, stir, and spoon that over every serving.
